Mk2 hubs wont work on a Mk1... suspension is different; not sure but think 'one' of the driveshafts from a mk2 is the same length; not 100% sure but think the CV's are the same...
Discs if they are 239mm will interchange, as will bigger discs from a 16v 256mm, G60, once you upgrade to opel vectra calipers (with longer sleeved bolts and the opel hoses)...
Mk2 springs will fit into the mk1 strut... if its a late caddy the loom will be similar to a mk2 so some electrical bits will interchange...

You can use the rear discs from a GTI mk2 on the rear of a caddy, tho caddy drums are the biggest, and general concensous is the rear drums are up to the job once the servo and m/c are upgraded... Pm gixer750 on here; he fitted mk2 GTI rear brakes to his caddy when he had it...
Im not sure on the m2 servo; if its the 'treaded fitting' its a direct swop, if its the 'ball attachement' (as per all mk3's) this needs to be whipped off with the grinder and then treaded....I used a b3 GT Passat servo.... You can use the m/c from the mk2; its handier if its 4-outlet (the replacement ones from GSF have four outlets); if its the two or three outlet type, you can 't-in' the lines below the m/c and include the mk1's brake switch, but it can look very messy, and you have to make up the lines. I used a T4 caravelle 22m/c as its what 'was going' - (my brother bought one to break)...

The original question you are asking is extremely broad. Yes of course some parts will transfer easily enough, some not at all and some will transfer but require specific other parts or procedures to make it happen.

Generally, I think there are more straight forward ways to rebuild a MK1 Golf/Caddy.

Maybe ask a different question - What exactly is he trying to do and improve? Then see what's out there be it over counter, from other MK1s - It doesn't have to come from a MK2.

On some specifics, rear disc conversion could be done (need different handbrake cables) and 16v engine can be done but there are some very specific things you need to consider.
